  • 3/4 cup granulated sweetener
  • 1/2 cup dairy-free chocolate chips
  • 1/2 cup + 1 tbsp cocoa powder (unsweetened)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 tsp salt
  • 1 1/4 cups shredded zucchini (tightly packed)
  • 1/2 cup nut butter of choice
  • 1/4 cup plant-based milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 360°F (182°C).
  2. Line a 6×9-inch loaf pan with parchment paper or grease it.
  3. In a food processor, blend rolled oats and dry ingredients until fine.
  4. Add wet ingredients and blend until smooth.
  5. Stir in chocolate chips.
  6. Pour batter into the pan and sprinkle extra chocolate chips on top.
  7. Bake for 35-40 minutes, checking for doneness with a toothpick.
  8. Allow cooling before serving.
