  • 4 cups mixed mushrooms (diced)
  • 1 cup white onion (diced)
  • 2 cloves garlic (minced)
  • 56 cups vegetable broth
  • 14 oz can coconut milk
  • Salt and pepper to taste
  • 2 tbsp vegan butter or oil
  • 1 tsp dried parsley

Instructions

  1. Rinse and soak the wild rice in cold water for 15-30 minutes.
  2. Chop the mushrooms and dice the onions while the rice soaks.
  3. In a large soup pot over medium heat, melt the vegan butter and sauté onions, garlic, and mushrooms for about 15 minutes until softened.
  4. Stir in parsley, salt, and pepper; add vegetable broth and drained wild rice.
  5. Mix in coconut milk; bring to a boil and then reduce heat to simmer for 20 minutes covered.
  6. Uncover and cook for an additional 15-20 minutes until the rice is tender.
  7. Let sit for 5 minutes before serving.
