  • 4 cloves garlic
  • 1 jalapeno
  • 1 red bell pepper
  • 2 tablespoons olive oil
  • 2 cans fire-roasted crushed tomatoes
  • 3/4 cup red lentils
  • 1 can black beans
  • 34 cups low sodium vegetable broth
  • chili powder
  • cumin
  • brown sugar
  • salt
  • oregano
  • cashew cream
  • lime juice
  • tortilla strips
  • avocado
  • cilantro

Instructions

  1. Sauté finely diced onion in olive oil in a large pot until translucent.
  2. Add minced garlic, diced bell pepper, and jalapeno; sauté for another 3 minutes.
  3. Stir in tomato paste; cook for an additional 2 minutes.
  4. Combine all remaining ingredients (except lime juice) into the pot.
  5. Bring to a boil; reduce heat and simmer covered for 20-25 minutes.
  6. Check lentils for doneness; blend a portion of the soup until smooth if desired.
  7. Return blended soup to the pot; stir in lime juice and adjust flavors as needed.
