  • 60g dairy-free softened butter
  • 4 tablespoons lemon juice
  • Zest of 1 large lemon
  • 200g plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon turmeric (or 2 drops yellow food gel)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, blend softened dairy-free butter, icing sugar, lemon juice, and lemon zest until smooth.
  3. In another bowl, whisk together plain flour, baking powder, bicarbonate of soda, and turmeric.
  4. Gradually mix dry ingredients into wet ingredients until just combined; chill dough for about 15 minutes if needed.
  5. Form tablespoon-sized balls of dough, roll in icing sugar, and place on a lined baking sheet.
  6. Bake for 10-12 minutes until slightly golden around the edges.
