  • 68 lasagna noodles
  • 1 2/3 cups hummus
  • 3.5 oz fresh spinach
  • 1 small can sliced mushrooms
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 1/2 cups marinara sauce
  • 7 oz vegan cheese
  • 1/2 tbsp oil
  • 1/2 tbsp soy sauce (gluten-free if needed)
  • 1/2 tsp cumin (optional)
  • 1/2 tsp paprika (optional)
  • A few tbsp lemon juice (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook the lasagna noodles in salted boiling water until al dente; drain.
  2. In a baking dish, spread about 1/2 cup of marinara sauce at the bottom.
  3. Sauté onion, garlic, and mushrooms in oil for about 4 minutes; add spinach and cook until wilted.
  4. Mix sautéed vegetables with hummus; season as desired.
  5. Lay each noodle flat, spread filling evenly (about 1/4 cup), then roll up tightly.
  6. Place seam-side down in the baking dish; pour remaining marinara sauce on top and sprinkle with vegan cheese.
  7. Bake at 360°F (180°C) for about 20-25 minutes until heated through.
