  • 500 g white bread flour
  • 10 g fast action yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3 tablespoons olive oil
  • 160 ml unsweetened non-dairy milk (lukewarm)
  • 160 ml water (lukewarm)
  • 75 g raw cashews
  • 4 cloves garlic (peeled)

Instructions

  1. In a mixing bowl, combine bread flour, yeast, salt, and sugar. Make a well for the yeast.
  2. Add olive oil, lukewarm non-dairy milk, and water; mix to form a rough dough.
  3. Knead the dough for about 5–10 minutes until smooth and slightly tacky.
  4. Place the dough in an oiled bowl to rise for 1–2 hours until doubled in size.
  5. Soak cashews in boiling water for one hour; then blend with garlic until smooth.
  6. Punch down the risen dough and divide it into approximately 29 pieces; roll into balls.
  7. Arrange on a baking sheet around an oiled ramekin; let rise again for 30–40 minutes.
  8. Preheat oven to 210°C/425°F; bake for about 20 minutes until golden brown.
