  • ¼ cup vegan butter
  • 2 tbsp vegan creamer (oat or soy preferred)
  • ¾ cup brown sugar
  • 1 cup flour
  • ½ cup nondairy mini chocolate chips
  • 1820 chocolate sandwich cookies
  • 1 cup nondairy chocolate chips
  • ½ cup peanut butter

Instructions

  1. Line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, cream together sugar and vegan butter until smooth. Mix in vegan creamer, salt, and vanilla.
  3. Gradually stir in brown sugar, nondairy milk, flour, and mini chocolate chips until combined.
  4. Press half of the cookie dough mixture into the lined pan. Layer the chocolate sandwich cookies on top.
  5. Melt nondairy chocolate chips and peanut butter together until smooth; pour over the cookies.
  6. Crumble the remaining cookie dough on top and chill in the refrigerator for about 120 minutes until firm.
  7. Slice into squares and enjoy!
