  • 2½ teaspoons instant dry yeast (or active dry yeast)
  • ¼ cup sugar
  • ⅓ cup canola oil (or melted vegan butter)
  • 3⅓ cups all-purpose flour
  • 1 teaspoon salt
  • ¼ cup vegan butter (for filling)
  • ½ cup brown sugar (for filling)
  • 4 teaspoons cinnamon (for filling)
  • ¾ cup powdered sugar (for glaze)
  • 1½ tablespoons dairy-free milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Warm almond milk until slightly warm. Sprinkle yeast and let sit for 5 minutes until foamy.
  2. Mix in sugar and canola oil, then gradually add flour and salt until combined.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  4. Place dough in a greased bowl, cover with a cloth, and let it rise for about 1 hour until doubled in size.
  5. Roll out the dough into a rectangle about ¼ inch thick and spread melted vegan butter over it.
  6. Mix brown sugar and cinnamon; sprinkle evenly over the dough.
  7. Roll up from one side into a log shape and cut into equal pieces (about 9 rolls).
  8. Place rolls in a greased baking dish; cover and let rise for another 30 minutes.
  9. Preheat oven to 350°F (175°C). Bake for 20-25 minutes until golden brown.
  10. For the glaze, whisk together powdered sugar, dairy-free milk, and vanilla extract until smooth, then drizzle over warm rolls before serving.
