  • 1/3 cup organic brown sugar (or coconut sugar)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg

  • 1/8 teaspoon ground cardamom (optional)
  • 10 tablespoons vegan butter
  • 1 1/2 cups all-purpose flour
  • Scant 2/3 cup old-fashioned rolled oats
  • 1 cup organic cane sugar
  • Scant 1/2 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1 1/4 cups full-fat oat milk
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 teaspoon pure almond extract (optional)
  • Vegan vanilla ice cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the fruit filling by slicing peaches and mixing them with blueberries, brown sugar, cinnamon, nutmeg, ginger, and cardamom. Let it sit for about 30 minutes.
  3. In a skillet over medium heat, melt vegan butter until it’s golden and nutty.
  4. In a separate bowl, mix flour, oats, sugar, salt, and baking powder. Combine with oat milk and vanilla extract until just mixed.
  5. Pour batter into the skillet with melted butter; layer fruits on top.
