  • 3 cups + 1 heaping Tablespoon gluten-free baking flour blend
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup cold butter or vegan butter (2 sticks, cubed)
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 pint blueberries
  • 6 oz raspberries
  • 6 oz blackberries

Instructions

  1. Preheat your oven to 375°F and prepare a 9×13-inch baking pan with nonstick spray.
  2. In a medium bowl, mix the berries with 1/2 cup granulated sugar and the heaping tablespoon of gluten-free flour; set aside.
  3. In a large bowl, combine the remaining flour, sugar, brown sugar, baking powder, cinnamon, and salt.
  4. Whisk together the egg and vanilla in a small dish; drizzle over the dry ingredients along with cubed butter. Use a fork to mix until crumbly.
  5. Press more than half of the crumb mixture into the prepared pan as the crust. Spread the berry mixture over it and top with remaining crumbs.
  6. Bake for 38–40 minutes until golden brown on top. Cool completely before cutting into squares.
