  • 14 oz firm tofu
  • 2 tbsp soy sauce
  • 1/2 tbsp maple syrup
  • 1/4 cup coconut milk
  • 1/2 tbsp sriracha
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/3 cup peanut butter
  • 1 tsp brown sugar
  • 2 tsp lime juice
  • 1/2 tbsp rice vinegar
  • 1/2 tsp ginger powder
  • 1/3 cup warm water

Instructions

  1. Drain the tofu by placing it between two plates with a weight on top for at least 20 minutes.
  2. Combine the marinade ingredients (soy sauce, maple syrup, coconut milk, sriracha, garlic powder, ginger powder) in a bowl and mix well.
  3. Preheat the oven to 400°F (200°C).
  4. Cut the drained tofu into strips and marinate in the mixture for at least 20 minutes.
  5. Bake the marinated tofu on a tray for 10-12 minutes on each side until golden brown.
  6. Meanwhile, prepare the peanut sauce by mixing peanut butter, brown sugar, soy sauce, lime juice, rice vinegar, ginger powder, and warm water until smooth.
  7. Serve skewered tofu satay with the peanut sauce drizzled over or on the side.
