  • 4 medium sweet potatoes (1214 ounces each)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • Shredded Mexican blend cheese
  • Diced tomatoes
  • Diced avocado or guacamole
  • Sour cream

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef with chopped onion and minced garlic until fully cooked. Drain excess grease.
  2. Stir in taco seasoning and chunky salsa; simmer on medium-low for about 5 minutes to thicken.
  3. Poke holes in sweet potatoes and microwave on a plate for 8–10 minutes until soft. Let them cool slightly before slicing lengthwise and fluffing the insides.
  4. Spoon the meat mixture generously into each sweet potato and top with cheese, tomatoes, avocado or guacamole, and sour cream.
