  • 2 cups cooked chicken, shredded

  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp ground cinnamon
  • Salt and black pepper, to taste
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 cup chicken broth or stock
  • 1/4 cup Parmesan cheese (optional)
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • Fresh parsley, chopped
  • Drizzle of honey

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the butternut squash and scoop out the seeds.
  2. Brush the cut sides with olive oil and drizzle with honey; season with cinnamon, salt, and pepper.
  3. Place squash cut-side down on a baking sheet and roast for 30–40 minutes until tender.
  4. In a mixing bowl, combine shredded chicken, diced onion, minced garlic, olive oil, thyme, rosemary, chicken broth, optional cheese, cranberries, walnuts (if using), salt, and pepper.
  5. Scoop some cooked squash flesh into the filling mixture for added flavor.
  6. Generously fill each roasted squash half with the chicken mixture.
  7. Return stuffed squash to the oven and bake for an additional 15 minutes until golden.
