  • 1 cup heavy whipping cream
  • 1 cup unsweetened almond milk
  • 1/2 cup powdered Swerve Sweetener
  • 4 large egg yolks
  • 1/2 tsp xanthan gum
  • 1/3 cup cocoa powder
  • 3 tbsp butter, cut into 3 pieces
  • 1/2 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 3 tbsp powdered Swerve Sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/2 ounce sugar free dark chocolate

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine almond flour, cocoa powder, Swerve Sweetener, and salt. Add melted butter and water; mix well. Press into the bottom of a greased 9×13-inch baking dish.
  2. Bake crust for about 10 minutes until set; cool completely.
  3. Beat softened cream cheese with Swerve Sweetener until smooth; fold in whipped heavy cream. Spread over cooled crust.
  4. In a saucepan, heat almond milk with Swerve Sweetener until simmering. Whisk egg yolks and xanthan gum in a separate bowl; temper with warm milk mixture before combining back into the saucepan. Stir in cocoa powder and butter until melted. Cool slightly before pouring over the cheesecake layer.
  5. Whip chilled heavy cream with powdered Swerve Sweetener and vanilla until stiff peaks form; spread over the chocolate pudding layer.
  6. Dust with cocoa powder and sprinkle with sugar-free dark chocolate shavings. Refrigerate for at least an hour before serving.
