Ingredients

  • Extra firm tofu
  • Black beans
  • Cilantro lime rice or Vegan Mexican Rice
  • Red and orange peppers
  • Avocado
  • Sriracha
  • Olive oil
  • Coconut sugar
  • Corn starch
  • Paprika
  • Garlic powder
  • Onion powder
  • Chili powder
  • Salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Press the tofu to remove excess moisture for 5–10 minutes.
  3. Mix coconut sugar, corn starch, paprika, garlic powder, onion powder, chili powder, and salt in a bowl.
  4. Cube the pressed tofu and place it in a mixing bowl.
  5. Combine olive oil and sriracha in a separate bowl.
  6. Coat cubed tofu with half of the oil mixture and toss with spice mix until evenly coated.
  7. Spread seasoned tofu on a parchment-lined baking sheet; add chopped peppers drizzled with oil.
  8. Bake for 20 minutes; brush remaining sriracha mixture on tofu and bake another 10–15 minutes until crispy.
  9. Assemble bowls with rice, beans, roasted peppers, crispy tofu, sliced avocado, and spicy tahini dressing.
