  • 2 cups cooked cilantro lime rice
  • 1 can black beans
  • 1 avocado
  • 1 cup pico de gallo
  • 1/4 cup olive oil
  • Fresh cilantro and lime juice

Instructions

  1. For the marinade, whisk together olive oil, chicken broth, lime juice, lime zest, minced garlic, salt, cumin, paprika, chili powder, oregano, and red pepper flakes in a mixing bowl.
  2. Cut the salmon into cubes (or leave whole) and marinate for at least 1 hour in the refrigerator.
  3. Prepare the cilantro vinaigrette by blending cilantro, shallot, minced garlic, olive oil, lime juice, water, red pepper flakes, and salt until smooth.
  4. Heat olive oil in a skillet over medium heat and cook the marinated salmon for about 3–4 minutes on each side or until crispy (internal temperature should reach 145°F).
  5. Assemble your burrito bowl: layer cilantro lime rice at the bottom and top with black beans, corn, cooked salmon, pico de gallo, diced avocado, and drizzle with cilantro vinaigrette.
