  • 1/3 cup almond meal (or breadcrumbs)
  • 1 egg
  • 5 cloves garlic, minced
  • 1/3 cup chopped parsley
  • 1 small onion, finely chopped
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 16 ounces mushrooms, sliced
  • 2 tablespoons butter
  • 1 cup yellow onion, sliced ¼ inch thick
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons fresh chopped parsley
  • 3 tablespoons Worcestershire sauce or balsamic vinegar
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt and pepper

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the ground beef, almond meal, egg, garlic, parsley, Italian seasoning, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Form the mixture into meatballs using a scoop and place them on the prepared baking sheet. Bake for 15-20 minutes until cooked through (165°F internal temperature).
  4. While the meatballs bake, sauté sliced mushrooms in olive oil until golden brown.
  5. Add butter and onions to the skillet; cook until softened. Stir in garlic followed by beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Simmer until slightly thickened.
  6. Once the meatballs are baked, add them to the skillet with the sauce and let simmer together for about 5 minutes before serving.
