  • 6 Tbsp aquafaba (chickpea water)
  • 2 tsp ground flaxseed
  • 6 Tbsp water
  • 5 oz coconut milk (room temperature)
  • 2 oz melted coconut oil
  • 16 oz all-purpose flour
  • 2 oz sugar
  • 1 tsp salt
  • 1 ½ tsp quick-rise yeast
  • 3 c olive oil (for frying)
  • powdered sugar
  • sugar
  • shredded coconut (or chopped nuts)
  • jam or any other vegan filling (if desired)

Instructions

  1. In a mixing bowl, combine aquafaba, ground flaxseed, and water; let sit for 5 minutes until thick.
  2. Add coconut milk and melted coconut oil; mix well.
  3. In another bowl, whisk together flour, sugar, salt, and yeast. Gradually add to the wet mixture until a soft dough forms.
  4. Knead on a floured surface for about 5 minutes until smooth. Let rise in a greased bowl covered with a cloth for about 1 hour.
  5. Roll out dough to ½ inch thick; cut into shapes using a doughnut cutter.
  6. Heat olive oil in a deep pot over medium heat; fry doughnuts for 2-3 minutes on each side until golden brown.
  7. Drain on paper towels and dust with powdered sugar or desired toppings.
