  • 2 cups heavy cream
  • 1 1/4 cup sweetener (to taste)
  • 1/2 cup raw cacao butter
  • 1 cup peanut butter powder
  • 16 oz cream cheese
  • 2 tsp vegan gelatin or plant-based gelling agent
  • 3 oz cold water
  • For the crust: peanut flour or peanut butter powder, almond flour, melted butter, powdered sweetener

Instructions

  1. In a medium saucepan, combine salted butter, heavy cream, and sweetener over medium heat until bubbly. Stir in raw cacao butter and peanut butter powder until smooth.
  2. Refrigerate mixture for at least 2 hours until thickened.
  3. Dissolve vegan gelatin in cold water. Whip cream cheese until fluffy; mix in dissolved gelatin and chilled peanut butter mixture until fully combined.
  4. Combine crust ingredients and press firmly into an 8-inch springform pan.
  5. Pour filling over crust; chill for at least 8 hours or overnight.
  6. Prepare drizzle by melting cacao butter and mixing in powdered sweetener and heavy cream to desired consistency before serving.
