  • 8 oz cream cheese (room temperature)
  • ¾ cup plain 0% Greek yogurt (room temperature)
  • ⅓ cup granulated sugar
  • 1 egg + 1 yolk
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 1 tablespoon arrowroot starch or cornstarch

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a food processor, pulse graham crackers into fine crumbs; mix with melted butter and pack into muffin liners.
  3. Bake crusts for 5-6 minutes and cool.
  4. Beat cream cheese until smooth; add remaining filling ingredients and mix until just combined.
  5. Divide filling among cooled crusts, bake for 17-20 minutes until set, then cool at room temperature before refrigerating for at least three hours.
