  • 1 lb asparagus
  • 450g super firm tofu
  • Juice and zest of 1.5 lemons
  • 2 tbsp cornstarch
  • 1/2 cup vegetable broth
  • 1/2 tbsp nutritional yeast
  • Freshly cracked black pepper and salt to taste
  • 1 tbsp avocado oil
  • 12 tsp maple syrup
  • 1/2 tsp dry thyme
  • 2 cloves garlic, crushed
  • 1 tsp red pepper flakes, optional

Instructions

  1. Preheat oven to 425F (220C) and prepare a lined baking sheet.
  2. Toss asparagus with a splash of avocado oil, nutritional yeast, lemon juice, salt, and pepper on the baking sheet. Roast for 10-12 minutes until tender-crisp.
  3. In a bowl, mix cornstarch, nutritional yeast, thyme, salt, and pepper. Coat tofu pieces in the mixture.
  4. Sear tofu in a skillet over medium-high heat with avocado oil for 3-5 minutes per side until golden brown.
  5. Combine lemon juice, zest, maple syrup, vegetable broth, and cornstarch in a bowl; pour into skillet after removing tofu. Simmer until thickened.
  6. Return tofu to skillet to coat in sauce; serve alongside roasted asparagus.
