  • 3/4 cup Swerve Granular
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 1/2 tsp vanilla extract
  • 2 3/4 cups almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar-free sprinkles
  • 8 ounces cream cheese (softened)
  • ⅓ cup powdered Swerve Sweetener
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • 2 tablespoon heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and Swerve Granular until smooth. Add the egg, egg yolk, and vanilla extract; mix well.
  3. In another bowl, combine almond flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until fully incorporated.
  4. Press the crust mixture evenly into a greased 9×13 inch baking dish and bake for 15 minutes or until lightly golden. Let cool slightly.
  5. For the filling, beat softened cream cheese and powdered Swerve Sweetener in a clean bowl until creamy. Add the egg, vanilla extract, and heavy whipping cream; mix until smooth.
  6. Pour the cheesecake filling over the cooled crust and bake for an additional 25-30 minutes or until set in the center.
  7. Allow to cool completely before slicing into squares.
