  • 4 Chicken Breasts (butterflied open)
  • 1 large Egg
  • 1/3 cup Almond Flour
  • 1 1/2 cups Beef Rinds
  • 2 tsp Garlic Powder
  • 2 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Oregano
  • 1 Roma Tomato (diced)
  • 2 cups Shredded Lettuce
  • 1/2 cup Mexican Blend Shredded Cheese
  • 1 Avocado
  • 1/3 cup Sour Cream
  • 1 packet Ranch Seasoning

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pound chicken breasts between parchment paper until thin.
  3. Whisk the egg in a shallow bowl. In another bowl, mix beef rinds with almond flour and spices.
  4. Coat each chicken piece in the egg mixture then cover with the beef rind mixture.
  5. Shape the coated chicken into a chalupa form over a springform pan or foil shape on a baking sheet.
  6. Bake for 25 minutes until cooked through. Let cool slightly.
  7. In a food processor, blend avocado, sour cream, and ranch seasoning until smooth.
  8. Fill the baked chicken chalupa with ranch avocado cream, shredded lettuce, diced tomato, and top with cheese.
