  • 1 ½ lbs cooked shredded chicken breast
  • 8.5 ounces sugar-free BBQ sauce
  • ½ teaspoon garlic salt
  • ½ cup diced red onion
  • 2 ½ cups coleslaw mix (or shredded cabbage)
  • 1 cup Monterey Jack cheese (grated)
  • 1 cup sharp cheddar cheese (grated)
  • 6 slices turkey bacon (cooked and crumbled)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large cast-iron skillet, combine the shredded chicken with BBQ sauce.
  3. Stir in garlic salt and diced red onion. Add half of both types of grated cheese and mix well.
  4. Top the mixture with coleslaw mix or shredded cabbage, then sprinkle the remaining cheese and crumbled turkey bacon on top.
  5. Bake for 15 minutes or until the cheese is bubbly and golden.
  6. Remove from oven and serve hot.
