  • 3 large Egg Yolks
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Vanilla Extract
  • 1 1/2 tsp Banana Extract

Instructions

  1. Heat heavy whipping cream in a saucepan over medium-low heat until it steams but does not boil.
  2. Cool the cream until comfortable to touch.
  3. Whisk egg yolks in a bowl; gradually add warm cream while whisking.
  4. Return the mixture to low heat, adding the tempered egg mixture while whisking continuously.
  5. Stir in Swerve sugar substitute and simmer until thickened.
  6. Remove from heat and mix in vanilla and banana extracts.
  7. Whisk for another 5 minutes as it cools, then cover with plastic wrap to prevent film formation.
  8. Chill in the refrigerator for 2-3 hours before serving.
