  • 10 oz zucchini, sliced
  • 10 oz yellow squash, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter (or additional olive oil)
  • Salt and pepper
  • Italian seasoning
  • Garlic powder
  • Lemon zest
  • Grated parmesan cheese (optional)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the chicken by dicing it into small pieces and slicing the zucchini and squash.
  2. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a skillet over medium heat until melted.
  3. Add the chicken to the skillet, seasoning with salt, pepper, Italian seasoning, and garlic powder. Cook for about 5-7 minutes until golden brown and cooked through.
  4. Stir in the sliced zucchini and yellow squash; season again with salt, pepper, Italian seasoning, lemon zest, and garlic powder.
  5. Cook for an additional 5-7 minutes until vegetables are tender yet crisp.
  6. Remove from heat; stir in lemon juice and sprinkle with parmesan cheese before serving.
