  • 275 g gluten free plain flour
  • 125 g cold unsalted butter or dairy-free butter
  • 1 tsp xanthan gum
  • Pinch of salt
  • 50 g light brown sugar
  • 1 large egg (beaten)
  • 12 tbsp cold water

Instructions

  1. Preheat your oven to 180°C/160°C fan.
  2. In a bowl, cut the cold butter into small cubes. Mix with gluten-free flour until crumbly.
  3. Add xanthan gum, light brown sugar, and salt; whisk until combined.
  4. Gradually add the beaten egg while mixing.
  5. Slowly incorporate cold water until slightly sticky dough forms.
  6. Shape into a ball, wrap in cling film, and chill for 30 minutes.
  7. Roll out the chilled dough on a floured surface until about 3-5mm thick.
  8. Fit the dough into your pie tin and prick the base lightly with a fork.
  9. Cover with baking paper and weigh down with baking beans or rice before baking.
