  • 2 1/2 teaspoons baking powder
  • 1 1/2 cups powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)
  • 1 tablespoon melted butter (for glaze)
  • 1 tablespoon milk (more as needed for glaze)

Instructions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Incorporate yogurt, lemon juice, zest, lemon extract, and vanilla extract.
  5. In another bowl, whisk together gluten free flour, baking powder, and salt; gradually mix into wet ingredients.
  6. Pour batter into prepared pan and bake for 55-65 minutes until a toothpick comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
  8. Prepare glaze by whisking powdered sugar with lemon juice, melted butter, and milk to desired consistency; drizzle over cooled cake.
