  • 1 egg (at room temperature, beaten)
  • 1 1/4 cups warm milk (about 95°F; plus a bit more, only as necessary)
  • 4 tablespoons unsalted butter (at room temperature)
  • 3/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup confectioners' sugar (sifted)
  • 1 tablespoon milk (any kind; plus more by the 1/4 teaspoonful)
  • 6 tablespoons unsalted butter (at room temperature)
  • 2 cups confectioners' sugar (sifted)
  • 3 tablespoons heavy whipping cream (at room temperature; plus more as necessary)

Instructions

  1. Grease a 9-inch x 13-inch casserole dish.
  2. In a large bowl, combine gluten free flour blend, xanthan gum (if needed), tapioca starch, dry milk powder, instant yeast, cream of tartar, baking soda, brown sugar, and salt; whisk well.
  3. In another bowl, mix warm milk, apple cider vinegar, beaten egg, and softened butter; pour into dry ingredients gradually while stirring until a soft dough forms.
  4. Knead the dough gently on a floured surface for 2-3 minutes until smooth; let it rest for 10 minutes.
  5. Roll out the dough to a rectangle about ¼ inch thick; spread softened butter over the surface and sprinkle with brown sugar and cinnamon.
  6. Roll tightly into a log shape and cut into 12 equal pieces.
  7. Place rolls in the prepared dish; cover and let rise in a warm place for about an hour or until doubled in size.
