  • 1 cup old cheddar cheese (shredded)
  • 1 cup gluten-free all-purpose flour with xanthan gum
  • ½ tsp salt (plus extra for topping)
  • ¼ tsp garlic powder
  • ¼ cup salted butter (cold and cubed)
  • 45 tbsp cold water

Instructions

  1. In a large mixing bowl, combine shredded cheese, flour, salt, garlic powder, and cold butter. Mix lightly before using a pastry blender or your hands to cut in the butter until it resembles small chunks.
  2. Gradually add cold water (1 tbsp at a time) until the mixture forms a ball. Divide into two discs and refrigerate for at least 1 hour.
  3. Preheat the oven to 375ºF (190ºC). Roll out one disc thinly on a floured surface and cut into small squares.
  4. Place squares on a parchment-lined baking sheet, sprinkle with salt, and bake for 14-16 minutes until crisp and golden orange.
  5. Allow to cool completely on a rack before serving.
