Ingredients

  • 2 tbsp olive oil
  • 1 white onion
  • 2 medium-large carrots
  • 2 cloves garlic
  • 250 g dried red lentils
  • 1 tin chopped tomatoes
  • 23 large baking potatoes

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Dice onion and carrots, sauté in olive oil for 4–5 minutes until soft.
  3. Add minced garlic, cook for an additional 1–2 minutes, then stir in corn flour.
  4. Mix in lentils, chopped tomatoes, herbs, spices, and half the vegetable stock; simmer for about 15 minutes.
  5. Thinly slice potatoes while the sauce simmers.
  6. Transfer lentil mixture to a baking dish if needed, layer potato slices on top.
  7. Drizzle with olive oil and season; cover with foil.
  8. Bake covered for 30 minutes, then remove foil and bake another 20 minutes until potatoes are crispy.
