  • 1 bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 lb ground beef
  • 4 tablespoons keto taco seasoning
  • 2 tablespoons tomato paste
  • 2 medium eggs
  • 1½ cups shredded cheese
  • ½ cup heavy whipping cream
  • 1 jalapeño (sliced, optional)

Instructions

  1. Preheat your oven to 180°C (350°F). In a large skillet over high heat, sauté the diced onion, bell pepper, minced garlic, and ground beef until browned.
  2. Stir in the taco seasoning and tomato paste until well combined. Transfer to a casserole pan.
  3. In a mixing bowl, whisk together eggs, heavy cream, and half of the shredded cheese. Pour this mixture over the beef layer in the pan and spread evenly. Top with remaining cheese and jalapeño slices if desired.
