  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, and oregano; cook for 5–7 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic, cherry tomatoes, zucchini, bell pepper, and red onion for about 5 minutes.
  4. Add orzo and chicken broth; bring to a boil, then reduce heat to low and cover. Simmer for 10–12 minutes.
  5. Return chicken to the skillet, drizzle with balsamic vinegar, and cook for another 2–3 minutes before serving with fresh basil.
