- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 red onion, chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried oregano
- Fresh basil for garnish
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, and oregano; cook for 5–7 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté garlic, cherry tomatoes, zucchini, bell pepper, and red onion for about 5 minutes.
- Add orzo and chicken broth; bring to a boil, then reduce heat to low and cover. Simmer for 10–12 minutes.
- Return chicken to the skillet, drizzle with balsamic vinegar, and cook for another 2–3 minutes before serving with fresh basil.
