  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped turnip (or potato)
  • 2 1/2 cups chopped sweet potato
  • 2 minced garlic cloves
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 1 cup green (or brown) lentils
  • 1 cup red lentils
  • 2 tablespoons turmeric
  • 4 cups vegetable broth
  • 1 cup almond milk
  • 1 cup spinach

Instructions

  1. In a large stockpot, heat avocado oil over medium heat. Sauté onions, celery, turnip, and garlic for about 5 minutes until softened. Season with salt, pepper, and thyme; cook for an additional 2 minutes.
  2. Stir in green and red lentils, turmeric, ginger, and cumin. Sauté for another minute.
  3. Pour in vegetable broth and bring to a boil. Cover, reduce heat, and simmer for about 30 minutes until lentils are tender.
  4. Remove from heat; stir in almond milk, spinach, fresh herbs, lemon juice, and red pepper flakes until spinach wilts.
  5. Serve warm.
