  • 1 (16 oz) package super firm or extra firm tofu
  • 1/3 cup plain plant-based milk
  • 1/3 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 cup buffalo sauce
  • 68 corn tortillas

Instructions

  1. Preheat your oven to 450°F (232°C). Pat the tofu dry and tear it into bite-sized chunks.
  2. In a large bowl, whisk together milk, flour, garlic, paprika, salt, and pepper until smooth. Add the tofu chunks and coat thoroughly.
  3. Pour panko over the coated tofu and mix gently until evenly coated.
  4. Spread the tofu on a baking sheet sprayed with cooking spray; lightly spray the top with more cooking spray. Bake for 15-20 minutes, flipping halfway through until golden brown.
  5. Toss the baked tofu in buffalo sauce until well-coated.
  6. Warm corn tortillas and assemble by adding guacamole and buffalo tofu. Top as desired.
