  • 19 oz can black beans
  • 1/2 cup salsa
  • 1 tbsp taco seasoning
  • 1 tbsp chipotle pepper in adobo sauce (or sriracha)
  • 1/2 tsp garlic powder
  • Salt to taste
  • 1 tbsp olive oil
  • Tortillas (flour or corn)
  • Optional toppings: dairy-free cheese, avocado, diced tomatoes, non-dairy sour cream

Instructions

  1. Preheat the oven to 450°F.
  2. Drain and rinse black beans. In a food processor, blend black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt until slightly chunky.
  3. Heat olive oil in a skillet over medium-high heat and add green onions; sauté until fragrant. Stir in bean mixture and cook for about 5 minutes.
  4. Scoop filling onto one side of each tortilla. Fold tortillas and brush with oil before placing on a baking sheet.
  5. Bake for 6–8 minutes, flip gently, then bake another 6–8 minutes until golden brown.
  6. Serve immediately with desired toppings.
