  • 2 tablespoons olive oil
  • 2 tablespoons ghee
  • 1 large onion (sliced)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken stock
  • 3 tablespoons Dijon mustard
  • 1/4 cup coconut cream
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken thighs with sea salt, black pepper, and garlic powder.
  2. In a large skillet over medium-high heat, add olive oil and brown the chicken on both sides for about 5-6 minutes. Remove and set aside.
  3. Lower the heat to medium; add ghee and sauté sliced onions until soft, then add minced garlic.

  5. Stir in Dijon mustard, coconut cream, lemon juice, and thyme.
