  • 4 chicken thighs (boneless, skinless)
  • Salt and black pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning
  • 1 tsp oregano
  • ¼ tsp red pepper flakes
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup Parmesan (grated)
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the seasoned chicken thighs for 2–3 minutes on each side then set aside.
  2. In the same skillet, sauté garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes until fragrant (2–3 minutes).
  3. Pour in chicken stock and heavy cream, then stir in parmesan and cornstarch using a whisk until smooth.
  4. Return the chicken to the skillet, cover with sauce, and cook on low heat for 15–20 minutes until fully cooked.
  5. Stir in fresh basil before serving warm.
