  • 4 tablespoons butter
  • pounds boneless skinless chicken breasts, cut into 1" pieces
  • 1 pound asparagus, cut into 1" to 2" pieces and steamed
  • ¼ cup onion, chopped
  • 8 ounces mushrooms, sliced
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme
  • ¼ cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1½ cups shredded gouda or swiss cheese (plus additional parmesan for topping)
  • ½ cup shredded parmesan cheese (reserve for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam asparagus for about 3 minutes until tender; set aside.
  3. In a skillet over medium-high heat, melt butter and cook chicken for about 6–8 minutes until browned.
  4. Remove chicken and place it in a greased casserole dish. Top with steamed asparagus.
  5. Sauté onions and mushrooms in the same skillet until tender.
  6. Lower the heat and add broth, cream, salt, pepper, Dijon mustard, whisking until combined; bring to a simmer.
  7. Let the sauce thicken slightly (about 8–10 minutes), then pour over chicken and asparagus.
  8. Stir in shredded cheese until well mixed.
  9. Sprinkle reserved cheeses on top and bake for about 30 minutes until bubbly.
