  • 2 medium zucchinis
  • 4 cloves garlic
  • 4 tablespoons extra-virgin olive oil
  • 2 oz mozzarella cheese
  • 1 oz Parmesan cheese
  • Fresh basil
  • Kosher salt
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice each zucchini in half lengthwise and score the flesh side in a crosshatch pattern. Season with salt and let sit for 15 minutes.
  3. In a skillet over medium heat, sauté minced garlic and crushed red pepper flakes in 2 tablespoons of olive oil until fragrant (about 1-2 minutes). Set aside.
