  • 5 cups chopped green cabbage
  • 5 cups beef stock
  • 1 cup riced cauliflower
  • 1/2 cup diced carrots
  • 1.5 teaspoons table salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground thyme
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot over medium-high heat, add ground beef and diced carrots. Cook until the beef is browned (about 5 minutes), breaking it apart as it cooks.
  2. Stir in the diced tomatoes (with liquid), chopped cabbage, beef stock, riced cauliflower, salt, oregano, and thyme. Mix thoroughly.
  3. Increase heat to bring to a simmer. Cover and reduce heat to medium-low; simmer for about 30 minutes until cabbage is tender.
  4. Serve hot, garnished with fresh parsley.
