  • 4 medium zucchinis
  • 1/2 cup buffalo wing sauce
  • 1/2 packet ranch seasoning (about 2 tbsp)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut zucchinis in half lengthwise and scoop out the insides using a spoon or melon baller.
  3. In a pan over medium heat, cook ground chicken until no longer pink. Stir in buffalo sauce and ranch seasoning until well combined.
  4. Place zucchini halves in a greased baking dish and fill them with the chicken mixture. Top with shredded mozzarella.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 5 minutes until cheese is melted.
