  • 1 cup vegan butter (room temperature)
  • 1 cup organic pure cane sugar
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 3 tablespoons organic pure cane sugar (for coating)
  • 1 tablespoon cinnamon (for coating)

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In one bowl, mix flour, cream of tartar, baking soda, and salt. In another bowl, cream together vegan butter and sugar until smooth. Add applesauce and vanilla; mix well.
  3. Combine wet and dry ingredients until just mixed; if too soft, chill for up to an hour.
  4. Roll dough into 1-inch balls and coat in cinnamon-sugar mixture.
  5. Place dough balls on the prepared sheet with spacing; bake for 8-10 minutes depending on desired softness.
