  • 1 medium head of broccoli
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 2 teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Kosher salt and pepper to taste

Instructions

  1. Prepare the marinade by mixing olive oil, balsamic vinegar, maple syrup, Italian seasoning, onion powder, garlic powder, smoked paprika, salt, and pepper in a bowl.
  2. Cut chicken breast into 1-inch pieces and marinate for at least 15 minutes.
  3. While marinating, chop the broccoli into florets and season with olive oil, salt, and pepper.
  4. Preheat the air fryer to 380ºF. Place marinated chicken in a single layer in the basket and cook for 10-12 minutes until cooked through.
  5. Shake the basket and add broccoli; continue cooking for another 6-8 minutes.
  6. Serve over rice or quinoa and garnish with parsley if desired.
