  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground pepper
  • 12 tbsp olive oil
  • 34 medium ripe tomatoes (about 1 lb) (cored, seeded, and chopped to a ½” dice)
  • 1 tsp kosher salt
  • 2 cloves garlic (minced)
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 2 tbsp thinly sliced basil leaves
  • ground pepper (to taste)
  • balsamic glaze (to taste, optional)

Instructions

  1. Combine chopped tomatoes, salt, and minced garlic in a bowl; let sit.
  2. Pound chicken breasts to an even thickness and season with olive oil and spices.
  3. Grill on high heat for 5–6 minutes per side or bake at 400°F for 10–12 minutes until cooked through.
  4. Stir olive oil, balsamic vinegar, and basil into the tomato mixture.
  5. Top cooked chicken with the bruschetta mix and serve.
